It is white as frost, transparent like jade, shiny oily, and tough and delicious." Every time the New Year comes, Yiyang people must do three things: slaughter pigs, make rice cakes, and fry rice candy. Making rice cakes means making Dahe rice cakes. Every household must choose high-quality and pure Yiyang specialty Dahe rice, soak it in pure mountain spring water for more than 72 hours, and make Dahe rice cakes through a unique process of three steamings and two hundred hammers to celebrate the New Year and give gifts to relatives and friends. People of all ages in Yiyang eat Dahe rice cakes, hoping that their lives will be better year after year. This custom has been passed down from generation to generation. Some people also make Dahe rice cakes into the shapes of various animals such as pig heads, which are used to worship gods and pray for good weather and happiness in the coming year. Yiyang Dahe rice cake is not only a kind of food, but also carries people's good wishes for prosperity year after year. In June 2010, the Yiyang Dahe rice cake making technique was included in the third batch of intangible cultural heritage list of Jiangxi Province.
