Yiyang Dahe Rice Production Technique (the third provincial level batch) Yiyang Dahe Rice (also known as "Yiyang Rice Cake") has a long history of production. According to the "Yiyang County Chronicles" published in the first year of Xianfeng, "Yiyang Dahe Rice grows up white". The 1991 edition records: "Yiyang Dahe Rice production began in the Ming Dynasty, and has a history of more than 500 years. It is made of high-quality, pure, white, and soft Yiyang specialty Dahe rice, which is processed through three steamings and two hundred hammers. It is white as frost, transparent like jade, shiny oily, and tough and delicious." Every time the New Year comes, Yiyang people must do three things: slaughter pigs, beat rice, and fry rice candy. Beating rice means beating Dahe Rice. Every household must choose high-quality and pure Yiyang specialty Dahe Rice, soak it in pure mountain spring water for more than 72 hours, and make Dahe Rice through a unique process of three steamings and two hundred hammers to celebrate the New Year and give it to relatives and friends. Yiyang people of all ages eat Dahe Rice, hoping that their lives will be "higher" every year. This custom has been passed down from generation to generation. Some people even make Dahemi@ into the shapes of various animals such as pig heads to worship the gods and pray for good weather and happiness in the coming year. Yiyang Dahemi@ is not only a kind of food, but also carries people's good wishes for prosperity every year. The whole family works together in a hot and steaming scene, maintaining family affection and exuding warmth. In June 2010, the production skills of Yiyang Dahemi@ were included in the third batch of intangible cultural heritage list of Jiangxi Province.
