Many diners heard the sign and came in droves, only then did they know that this braised food was delicious. In addition, the store is close to the Chengdu Jinjiang Theater, and the middle and upper class women who love Sichuan opera are almost all the guests of "Panshan City". Most of these customers are good eaters, which has promoted the store invisibly, so the business is booming. The stewed food in Panshan City uses fine ingredients and pays attention to the heat. The small goods that are stewed well are soft and delicious. They are brushed with sesame oil when they are sold. The color, aroma and taste are one level higher than the general "roast meat stalls". They are favored by diners and are crowded with customers every day. Later, in order to expand sales, the store launched braised meat with pot cakes while operating braised food. Legend has it that during the warlord period, Chen Guodong, the commander of the Seventh Division of the Sichuan Army, liked to eat the braised pork with pot cakes from Pansun Market. He often sent his orderly to Pansun Market to buy hot pot cakes and run back home for his own consumption, and often used them to entertain guests. Once, he went to the suburban counties to inspect work, and asked the driver to take a detour to Pansun Market and call for a few braised pork with pot cakes. He ate them while sitting in the carriage, which became a hot topic in the military and catering circles. How to make this braised pork with pot cakes: The crispy white flour pot cakes are baked by the pot cake chef in the hall, and the chef on the other side uses a knife to cut the baked white flour pot cakes in half from the edge; the pot cake is placed on the stove and cooked over low heat to keep the brine slightly boiling.
