Lu Gaojian's Technique of Making Su-style Stewed Dishes Lu Gaojian in Suzhou was founded in the second year of the reign of Emperor Kangxi of the Qing Dynasty (1663) and was opened by the Lu family. Since its establishment, Lu Gaojian has been famous for its stewed dishes, from an ordinary butcher shop specializing in raw and cooked meat to its own style. In the tenth year of Emperor Xianfeng of the Qing Dynasty (1860), the business was completely lost due to war. Later, in the fifth year of Emperor Tongzhi (1866), the family business was revived at the original site of Chongzhen Palace Bridge. During the reign of Emperor Guangxu, descendants Lu Wei and Lu Nianchun were not good at management and suffered losses year after year. In the twenty-eighth year of Emperor Guangxu of the Qing Dynasty (1902), the Lu Gaojian brand was leased by Ni Songpo from Fengqiao. Ni Songpo changed his Cufangqiao cooked food shop in Guandong to Lu Gaojian, and later called it Dafang Lu Gaojian; and changed the main store at Gaoqiao, Xizhong City to Lao Lu Gaojian. In the 34th year of Emperor Guangxu's reign in the Qing Dynasty (1908), there were 46 meat businesses that had joined the Suzhou Chamber of Commerce, of which 4 used the Lu Gaojian brand, and another 2 that had not joined also used the Lao Lu Gao and Du Lu Gao brands. During the Republic of China period, there were nearly 20 meat shops in Suzhou that used the Lu Gaojian brand. Before 1949, there were 140 meat shops in Suzhou, of which 15 used the Lu Gaojian and similar brands. The Dafang Lu Gaojian, located in Guanqian, in the downtown area, used wheat ears as a base, added the two words "Dafang", and marked "only this one, no branches" to show that it was "authentic". Before 1949, a large wooden plaque with black lacquer and gold characters was hung in the middle of the Lu Gaojian store, which recorded the store's founding in the second year of Emperor Kangxi's reign and its historical changes. During the "Cultural Revolution", the Dafang Lu Gaojian was renamed Suzhou Cooked Meat Shop. Later, the original name "Dafang Lu Gaojian" was restored. In 2003, it was restructured into Suzhou Lu Gaojian Food Co., Ltd. with a registered capital of 4.2 million yuan. After several generations of careful management, Lu Gaojian has gradually expanded from more than ten varieties of single sauced meat to more than one hundred varieties of four categories: barbecue, fermented, smoked and sauced. In the old days, there were four signs at the door of Lu Gaojian: five-spice sauced meat, secret sauce duck, wine-braised meat and Jincheng sugar pig's trotters, which are Lu Gaojian's signature braised dishes.
