Since ancient times, there has been a custom in the south of the Yangtze River of China to "taste chrysanthemums and crabs in autumn". In the ninth year of Emperor Qianlong's reign in the Qing Dynasty (1744 AD), a tavern named Wang Baohe opened on Xiangua Street, Xiaodongmen, Shanghai. It was one of the earliest restaurants in Shanghai. In the second year of Emperor Xianfeng's reign (1852 AD), it moved to the area of Nanjing Road and Shanxi Road today. In 1936, it moved to the current location at the intersection of Fuzhou Road and Zhejiang Road and was renamed Wang Baohe Restaurant. It is famous for its "Wang Baohe Old Wine" and Qingshui River Crabs, and is known as the "King of Crabs and the Ancestor of Wine". In October 1979, it innovated and created the "Chrysanthemum Crab Feast", which is even more famous. Wang Baohe's crab feast is characterized by "exquisite selection of ingredients, fine knife skills, elegant colors, light taste, tender and delicious, and original flavor". The unique crab dishes are not only delicious, but also unique in shape, lifelike, and full of color, fragrance, and shape, making people reluctant to eat. Wang Baohe also uses different processing methods according to different parts and seasons of hairy crabs, changing the traditional drawbacks of few dishes, few ways of presentation, and little taste change caused by single ingredients. Dozens of crab dishes are inseparable from the word crab, even dim sum is no exception, making the banquet "crab from beginning to end" with a unique style. Wang Baohe shows a variability that is different from other banquets with a single main ingredient by matching with a variety of ingredients. This is precisely due to Wang Baohe's unique skills formed through long-term exploration under the influence of many factors such as ancient Chinese Yin-Yang and Five Elements philosophy, Confucian ethics and moral concepts, Chinese medicine nutrition and health theory, and cultural and artistic achievements, dietary aesthetics, and national character characteristics.
