Yancheng sea salt sun-drying technique
The art of drying salt (Yancheng sea salt drying art) is a traditional art project in the second batch of representative projects of intangible cultural heritage in Jiangsu Province. Using seawater as the basic raw material, and using the beach and its salty mud (or artificially made mixed ash soil), combined with sunlight and wind evaporation, brine is made through manual labor such as pouring and splashing, and then naturally crystallized into raw salt through fire frying or sun exposure, wind energy, etc. High-quality salt is still solid and can not be broken, the cube has edges and corners, transparent and white, does not stick to the hands after being crushed by hand, pure, and no wool salt is precipitated. The whole process has more than 10 steps, which are purely manual operations. It seems simple but reflects wisdom. Most of the salt drying relies on sunlight and wind evaporation, which is natural and has no specific physical and chemical indicators. The processing technology is related to factors such as climate and season, and is also related to suspended sand and tides. The uncertainty is obvious.
